Flax Seed Whole Wheat Muffins

1 1/2 cups Oat Bran
1 cup whole wheat flour
1 cup ground flax seed
1/2 cup wheat germ
1/2 cup cracked wheat
1/2 t. salt
1 T. baking powder
1 t. baking soda
1 cup brown sugar ( I use the Splenda)
1 T. cinnamon or pumpkin pie spice
1 cup buttermilk
1/4 cup canola oil ( I use olive)
1 1/2 cups unsweetened applesauce
2 eggs
1 1/2 cups dried fruit ( I use cranberries or mixed berries, it calls for raisins )

Preheat oven to 375°F.  Spray muffin tins with Pam or other spray.  In a large bowl, combine all dry ingredients, and stir together.  Combine all wet ingredients in a separate bowl and stir with wire wisk.  Spoon into muffin tin---3/4 full.
Bake about 15 minutes, or until the center springs back when touched.

Cool in pan about 3 minutes, then remove muffins and place on wire rack to cool completely.
